Changes in Enzyme Activities During Postharvest Deterioration of Green Asparagus Spears
نویسندگان
چکیده
Fresh asparagus (Asparagus officinalis L.) deteriorates rapidly after harvest. Early enzymatic changes that follow harvesting of asparagus are important factors contributing to postharvest deterioration. We held asparagus spears at 25°C for up to 5 days after harvest and examined changes in the activities of Acid invertase (AI), Sucrose Synthase (SS), Glutamine Synthetase (GS) and Phenylalanine ammonia Lyase (PAL) in both top and bottom portions of the spears. Soluble AI activity increased during the first day of storage and after that it decreased gradually up to five days in both top and bottom portions. Sucrose synthase activity was higher in the bottom portion than in the top; its activity declined daily for five days. Sucrose content was negatively correlated with invertase and sucrose synthase in both portions.GS enzyme activity in both top and bottom portion declined throughout the experimental period which may be related to increased ammonia accumulation. The increase in PAL activity continued until day 3 and declined thereafter.

BACKGROUND Asparagus officinalis has a high nutritional value. Asparagus is rich in a number of bioactive compounds, mainly flavonoids (quercetin), glutathione, vitamin C, vitamin E, fructans (inulin and fructooligosaccharides) and phytosterols (b-sitosterol). These compounds may play an important role in human health. The purpose of this study was to examine the antioxidant potential and polyp...
متن کاملlsolation and Characterization of a cDNA Clone for a Harvest-lnduced Asparagine Synthetase from Asparagus officinalis
A full-length cDNA clone (plIP27) encoding asparagine synthetase (AS; EC 6.3.5.4) was isolated from a cDNA library prepared from the tip section (apex to 30 mm) of Asparagus officinalis L. spears. The cDNA clone encodes an mRNA of 1978 bp, giving a derived protein of 66.5 kD molecular mass. l h e derived amino acid sequence is 81% homologous to AS from fisum safivum. Only low levels of transcri...
متن کاملMineral Nutrient Composition of Green and White Asparagus Spears
Mineral nutrients were determined in green and white ‘Jersey Giant’ asparagus (Asparagus officinalis L.) spears grown in 1991 near Booneville, Ark. Green spears had higher concentrations of tissue N, K, P, S, Na, and Zn; similar levels of Fe, Al, and Cu; and lower levels of NO3 than white spears grown under opaque plastic rowcovers or under sawdust mulch. Levels of Ca, Mg, and Mn were higher in...
متن کاملIdentification, cDNA Cloning, and Analysis of mRNAs Having Altered Expression in Tips of Harvested Asparagus Spears.
Changes in mRNA activity in tips of harvested asparagus spears (Asparagus officinalis L.) held in light or dark for up to 48 h at 20 degrees C were investigated as an initial step in elucidating the genetic response of asparagus spears to harvest. Total RNA was isolated from 30-mm tips of spears 180 mm in length at 0, 6, 12, 24, and 48 h after spear harvest and translated in vitro, and translat...
متن کاملProduction and Quality of White Asparagus Grown under Opaque Rowcovers
Black and white plastic rowcovers were established over field-grown ‘Jersey Giant’ asparagus (Asparagus officinalis L.). Spears were cut for 7 weeks. Season soil temperatures were lowest under white plastic and highest without plastic covering. Night air temperature under plastic covers was ≈ 1.4C higher than without plastic covering (control), but day air temperature was typically 10C higher u...
